There is no way around it gaining pure lean music = lots of Protein
You can gain pure lean muscle without increasing ur calories, carbs and fat it just takes longer.
Putting on weight = as you said increase your calorie intake, fat and of course protein.
I was only touching on the part you said ". Working out turns the extra weight into muscle"
What i meant was that you have to eat more food, i didnt mean that it just turns the weight into muscle. Of course you need a lot of protein, but without enough carbs you are giving yourself very little highly efficient energy so you will burn through a lot of the protein in a workout, and by not having enough fat you are going to limit testosterone production (amongst other things), so making sure you get enough of each is essential for building muscle in a relatively short time (still talking a matter of months/years but it takes less time).
To actually gain mass though you have to have more calories going in than coming out, otherwise you cant gain weight. Maybe not a 500cal/day surplus but there still needs to be some extra.
