Replacing bread is awful! I love bread so much haha. Big ray is right about oats though, they are a great breakfast food. You can even blend them up and mix them into a protein smoothie to start the day (just to add some variety to your diet).
Counting calories is all you need to do at first. However, your body gets used to low calorie diets and it loses less weight each week (as you are starting to notice). That's when you need to make a diet plan with specific foods and food groups.
P.S. We call cow meat "beef"
