I don't know if I would've wanted to see him record Difficult. I'd rather see Eminem in the studio while he was crazy and in his prime. Kim would be so hilarious to watch being recorded. I wouldn't want to see him while he was all drunk and broken down. I can imagine it taking a coupple tries before he got it without crying too. 
So yeah, I'd choose Kim, even though I like Difficult way more.
