I wouldnt say that all good hip-hop albums define hip-hop. MMLP and GRODT are anomalies in the grand scheme of things, sort of doing their own little thing; with MMLP being very progressive in terms of ideas and very punk in spirit and GRODT being the odd, club/trash rap album that was actually good. I dont know how to describe hip-hop but stuff like Nas and Wu-Tang comes to mind.

Also, materials from Boogie Down, Grandmaster Flash and The Furious Five, Tupac, Tribe Called Quest, Wu Tang and some more which I can't think of right now.
That last one will be on most people's list in some time.(GKMC)
