He was taken to hospital from his home in Ipswich, Suffolk, for the treatment earlier this month after he ballooned to 70st.
The operation involved having part of his stomach stapled off so that all the food he eats goes into a small pouch, vastly restricting the amount he can consume.
Mr Mason, who has a compulsive eating disorder, is now said to be recovering well at St Richard's Hospital in Chichester, West Sussex, and looking forward to shedding more weight.
He had made the 145-mile journey to the specialist unit earlier this month in a reinforced ambulance.
In the build up to the surgery, Mr Mason had been on crash diet to bring his weight down to a safe level for doctors to operate.
He will spend two weeks in hospital and will require another operation in six months.
“Paul is looking pretty well. He has lost a lot of weight, but has a lot more to lose,” an NHS source told The Sun.
“He said he has been waiting eight years for the procedure, but now that he weighs around 49st it's been worth the wait.
“He said his aim is to be able to get into a mobility wheelchair and eventually drive a car.”
Prior to the treatment, Mr Mason admitted eating 20,000 calories a day, eight times the amount needed by an average man.
His care bill costs taxpayers an estimated £100,000 a year and is believed to have topped £1 million over the last 15 years.
Firefighters had to demolish the front wall of Mr Mason's former home in Ipswich so they could drive a fork lift truck inside to lift him out and put him into an ambulance when he needed a hernia operation in 2002.
At the time he weighed 56st and told doctors that he was desperate to lose weight. He ended up slimming down to 45st before piling the weight back on with his junk food diet.
Mr Mason took the title of the world's heaviest man after Mexican Manuel Uribe, 43, more than halved his 90st weight to get married last year.
