How would you hack into an email like that? Wouldn't you have to know the password?

It takes a little work, but it can be done. Even GUI script-kiddie type stuff can crack a decent password now, and it's a little more sophisticated than the old brute force methods. A very good password could still protect sensitive information though...

As has been said though, this guy doesn't strike one as the intellectual type. His password is probably gangstabussiness1 or something.

I hacked by girlfriends Email and Facebook earlier in our relationship when I was trying to get info on her.

I seriously doubt you hacked anyone, from your grammar.
