Dre's magic is the overall music, he helped Eminem and Snoop with their delivery, places where there's some kind of kooky melody like that little singin thing Snoop does sometimes, that's all DRE. Dre is the ultimate producer, he can write lyrics, rap lyrics, create hooks, make kick ass head-rockin beats, and can even help the best rappers, be better than they would be without him. So my points were not a diss to Dre, I kow he didn't write the lyrics to some of his shit, that's because he's not lyrically talented to come up with that shit, but you can bet he came up with a lot of cool song concepts for Eminem & Snoop.

Speculating that someone ghostwrote for someone else is very wooly, imo, and it involves a LOT of guesswork. You can't say for certain that someone ghostwrote unless they've admitted it.
In a perfect world, lyrics would be the only thing that truly mattered in rap, or in any genre for that matter...to me, lyrics are absolutely the most important part of a song. However, I believe there are songs, like a certain one about lip gloss I could name, that completely defy this..being able to write good lyrics is not the only thing the industry looks at. Having an image and being able to sell records is just as, if not more, important. So I bet ghostwriting is more common than we'd think.
Again, though, it's completely speculation.
